The expert’s notes
It is a 100% Italian extra virgin olive oil, of Tuscan origin harvested in 2021, with a light fruitiness, which then leaves room for a delicate bitterness that precedes a pleasant and never aggressive spicy.
It is excellent for Mediterranean cuisine, and for pairing with vegetable-based first courses, chickpea and yellow squash soups, on fish carpaccio, on classic tomato bruschetta but also on imaginative fruit salads.

Harvest: 100% Extra virgin olive oil obtained from olives harvested on the Chianti hills and pressed within the day. The harvested olives are stored in perforated crates of about 15-20 kg each or in 250-300 kg bins and transported within a short time from the companies to the Frantoio, where they are immediately defoliated, washed and sent for processing. The Frantoio del Grevepesa works in a continuous 2-phase cycle, i.e. without adding water during the extraction phase, and is equipped with 2 extraction systems.
